The influence of betaine and creatine monohydrate supplementation on chemical composition, oxidative stability and pork quality in RYR1 heterozygous pigs

The aim of this study was to evaluate an effect betaine and creatine monohydrate supplementation on chemical composition, meat quality, oxidative stability pork in pigs genotyped mutation RYR1 gene. Totally, sixty – crosses Lx(HAxPN) were involved the experiment. Pigs divided one homozygous (NN) control (C1), three heterozygous (Nn) groups, each group including 15 animals. One Nn (C2) two groups experimental. Control received a standard diet without supplement. Experimental fed same composition as controls but with supplement BET (1.25 g/kg feed) or - CMH (2.0 for thirty days prior slaughter. C2 had worse especially pH45, colour L* drip loss (P<0.05), than C1 pigs. Dietary increased initial pH decreased (P<0.05) compared group. Supplementary also pH45 tendency lowering (P=0.058). Both feed additives substantially improved pork, after 120 min incubation (P<0.01),
